Waiting for a cook
Mauritius
Dholl puri is the street food Mauritius is proudest of: a paper-thin wheat flatbread with a filling of ground yellow split peas and cumin sealed inside the dough, cooked on a hot plate in under a minute. It is sold in pairs, wrapped in paper, with butter-bean curry, rougaille and a spoon of chilli or coriander chutney folded in. The dish came with Bihari indentured workers in the 1800s and is now eaten by every community on the island.
The draft was written from 3 published sources and holds 13 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
