Waiting for a cook
Nigeria · North (Hausa)
Dambun shinkafa is the rice member of the Hausa dambu family, the steamed grain dishes of northern Nigeria (dambun nama is the shredded meat, dambun acca the fonio). Broken rice (tsaki, the same grits used for tuwon shinkafa) is steamed in a colander over boiling water, then mixed with moringa leaves (zogale), onion, spring onion, carrot and chilli and steamed again, and finished with groundnut oil, crushed groundnuts or a spoon of butter. It looks like a green fried rice and is cooked for naming ceremonies and weddings, served with suya or pepper.
The draft was written from 2 published sources and holds 10 ingredients and 6 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
