Waiting for a cook
Algeria
Chorba frik is the Ramadan soup of eastern and central Algeria: lamb browned with onion, garlic and grated tomato, simmered with chickpeas, coriander, celery and warm spices (paprika, cinnamon, ras el hanout or ground coriander and ginger), then thickened in the last quarter hour with frik, cracked green wheat harvested young and roasted. Dried or fresh mint goes in at the end. It is the eastern cousin of Algiers' red vermicelli chorba and Tunisia's barley chorba, and it breaks the fast alongside bourek, matlouh and salads.
The draft was written from 3 published sources and holds 12 ingredients and 6 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
