Waiting for a cook
Angola
Calulu is Angola's layered stew of dried (or dried and fresh) fish with onion, tomato, okra, aubergine and sweet potato leaves, cooked in red palm oil until everything is soft and the leaves have wilted into the sauce. It is one of the two dishes Angolans call national alongside muamba, eaten with funge and beans in palm oil. It is not stirred but shaken, so the fish stays in pieces. São Tomé and Príncipe has its own calulu, with more herbs.
The draft was written from 4 published sources and holds 13 ingredients and 5 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
