Waiting for a cook
Nigeria
Boiled groundnuts are the rainy-season street snack of Nigeria: fresh groundnuts still in their shells, straight from the ground, boiled in salted water until the kernels are soft and slightly creamy, then sold warm in cones of paper or measured out by the cup from a basin at the roadside. The texture is nothing like a roasted nut, closer to a cooked bean. They are eaten from the shell, crack and pop, on the walk home from school or out of a bus window in traffic. The season is short, from around July to October when the harvest comes in.
The draft was written from 2 published sources and holds 3 ingredients and 5 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
