Waiting for a cook
Algeria
Bniouen is the Algerian "no-bake" sweet that turns leftovers into a wedding tray: broken shortbread, wafers or plain shop biscuits blended with halwa turc (sweet sesame halva), cocoa, honey, soft butter and crushed nuts into a paste, set in the fridge, then either cut into diamonds under a coat of dark chocolate or rolled into balls dipped in chocolate and coconut. It began as an anti-waste recipe for the end of the Eid baking and has become a fixture of the modern Algerian pastry tray, made in dozens of flavours.
The draft was written from 2 published sources and holds 9 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
