Waiting for a cook
Uganda
Binyebwa, "g-nut sauce", is the everyday sauce of Uganda: raw groundnut paste stirred into water and simmered slowly, with tomato and salt and often mushrooms, greens or vegetables, until it thickens and the nut oil rises to the top. Most Ugandan families eat it at least once a week, poured over matooke (steamed green banana), posho, rice or boiled cassava. It is plainer than the West African peanut stews: no chilli base, no meat needed, and the taste is of the groundnuts themselves.
