Waiting for a cook
Ghana
Bamfo bisi, called awiesu or akpiti in other parts of Ghana, is a street snack of milled corn: half the cornmeal is cooked with water into a stiff paste, like a choux made with corn, then worked into the rest of the dry meal with sugar and nutmeg, rolled into oblong fingers with a few roasted groundnuts pressed inside, and deep-fried until golden. Crunchy outside, soft inside when hot, it hardens as it cools and keeps in the pocket; it is sold by the piece at lorry parks and school gates and eaten with a handful of groundnuts.
The draft was written from 2 published sources and holds 6 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
