Waiting for a cook
Ghana · Bono and Ashanti (Akan)
Abunuabunu, "green green" in Twi, is the green soup of the Bono and the wider Akan: a light soup of goat meat, snails and dried river fish, cooked with tomato, onion, kpakpo chilli and ginger, into which a smooth purée of boiled kontomire (cocoyam leaves) is stirred at the end so the whole pot turns leaf-green. It is eaten with fufu above all, and the colour puts some people off until they taste it. The trick is to keep the tomato light so the soup stays green rather than brown, and to add the blended leaves late, since they are already cooked. Some cooks blend a spoon of groundnut paste into the leaves and finish with a pod of prekese.
The draft was written from 2 published sources and holds 10 ingredients and 7 steps. It has never been cooked by anybody at AFN, which is why it is waiting.
