Prepare the coconut milk and mix with the corn flour. Set aside.

Shred the green, red and yellow bell peppers with the mushrooms and chop the onion.

Marinade the chicken pieces with the onion powder, thyme, some salt, black pepper and half of the chopped onions.

Put it in a pot with little water, stir over medium heat till it is well steamed.

Add the coconut milk mixture and the curry powder, cover and cook for about 3 minutes.

Add the mushrooms and once it boils again, chopped carrots, green & red bell pepper and green peas.

Cover and once it simmers, add salt and more water if necessary.

Leave to cook until the chicken is tender and the veggies are well cooked.

Serve with boiled white rice, boiled white coconut rice, pasta, mashed potatoes and other boiled staple foods.

- Brown the chicken first and take it out. The fond left behind is where the depth comes from.
- Cook the curry powder in oil briefly before liquid goes in, raw spice powder tastes dusty.
- Keep the coconut milk below a hard boil or it splits and goes grainy.
- Add quick vegetables like broccoli or peppers near the end so they keep their texture.

What is curry powder actually made of?
It varies enormously by brand and region. Most blends are built on turmeric, coriander and cumin, with fenugreek, mustard, chilli and pepper appearing in different proportions. There is no single correct formula, which is why two curry powders can produce noticeably different dishes from the same recipe.
Why did my coconut milk split?
Too much heat. Coconut milk separates if it is boiled hard, leaving a grainy sauce with oil on top. Bring it to a gentle simmer and hold it there. Full-fat coconut milk is more stable than reduced-fat versions, which split more readily.
