Put a pot of water on to boil. When it boils, add the macaroni, and drain it once cooked.
Put the cooked macaroni and all the vegetables into a large bowl. Cut the boiled eggs into pieces and add them.
In a separate bowl, combine the mayonnaise, evaporated milk and lemon juice and mix together.
Pour the dressing over the macaroni and vegetables and mix everything together.
Serve.

Reminds me of every Sunday rice and salad back in Lagos. couldnt find peak milk at the local tesco in manchester so used carnation instead, dressing still turned out very creamy. e sweet sha.
My kids finished the whole bowl before dinner time. Dicing the 3 large carrots took me more than 10 minutes o, but the taste was very good. I added extra sweetcorn for them.
Never thought of putting evaporated milk into a salad dressing before, usually just put it in tea! Was a bit skeptical but tried it yesterday with the macaroni and it made the dressing so smooth. Added a little extra lemon juice to cut through the mayo.
