En attente d'un cuisinier
Algeria · Constantine and Annaba (east)
Chbah essafra means "the beauty of the table", and it is the showpiece of Constantine's and Annaba's Ramadan and wedding tables: lamb cooked in a sweet-and-salty sauce of onion, butter or smen, sugar, cinnamon, saffron and orange-flower water (the same family as lham lahlou), served under a crown of diamond-shaped almond-paste pieces, dipped in egg white and fried twice so they stay firm in the sauce. Annaba's old Turkish-descended families make it with walnuts instead of almonds. It is eaten with bread, and the almond diamonds are what everyone reaches for first.
Le brouillon a été écrit à partir de 2 sources publiées et compte 14 ingrédients et 7 étapes. Personne chez AFN ne l'a jamais cuisiné, et c'est pourquoi il attend.
