En attente d'un cuisinier
Nigeria · South West (Yoruba)
Baba dudu, "black father", is the dark coconut toffee of Nigerian childhood: coconut milk boiled down to its cream and cooked with sugar until it turns from white to caramel to a deep chocolate brown, then scooped hot into little twists of clear nylon where it hardens into hard, chewy, burnt-sugar sweets. It is sold by the string at school gates and kiosks under a dozen names (sweet alagbon, chalbin mallam, black tofi), and the strings were once worn round the neck as "bullets" in games of police and thief. Two ingredients, a pot, and patience at the stove.
Le brouillon a été écrit à partir de 2 sources publiées et compte 4 ingrédients et 6 étapes. Personne chez AFN ne l'a jamais cuisiné, et c'est pourquoi il attend.
