Scrambled Egg Sandwich

- 8 large eggs
- ¼ cup milk
- salt and pepper to taste
- 1 tablespoon butter
- 8 slices bread (toasted)
- 4 slices cheddar cheese
- ¼ cup pesto
Crack eggs into a bowl and beat well with milk, salt and pepper.
Melt butter in skillet over medium-low heat. Pour in egg mixture.
Slowly stir eggs constantly until they form soft curds, about 6-8 minutes. Remove from heat just before completely set.
Build sandwiches by layering toasted bread, cheese, scrambled eggs and pesto. Enjoy!
