Carefully place the coated yam strip into the hot oil. You can fry a few at a time, depending on the size of your fryer or pot. Fry until golden brown and crispy, about 4-5 minutes per side
Use a slotted spoon to remove the fried yamarita from the oil and place them on a plate lined with paper towels to drain excess oil.
Repeat the process with the remaining yam strips.
Serve the yamarita hot, with your choice of dipping sauce or accompaniment. Tomato sauce, ketchup, or a spicy pepper sauce are popular options
