Preheat your waffle iron and Lightly grease the plates.
In a large bowl, cream together the butter and sugar until light and fluffy, about 2 minutes.
½ cup butter (softned), 1 cup sugar
Beat in the eggs and vanilla until combined. In a small bowl, whisk together the flour, baking powder and salt.
2 large eggs, 1 teaspoon vanilla extract, 1½ cup all purpose flour, 1 teaspoon baking powder, ½ teaspoon salt
Gradually stir the dry ingredients into the wet ingredients until a thick dough forms.
Scoop rounded tablespoon-sized balls of dough onto the preheated waffle iron. Cook for 2-3 minutes, until lightly browned.
Carefully remove the cookies from the iron and transfer to a wire rack to cool slightly.
Repeat with remaining dough. Once cooled, dust the waffle cookies lightly with confectioners' sugar. Enjoy!
