Prepare the chapatis according to package instructions until soft and slightly browned, keeping them warm.

Heat vegetable oil in a large skillet, sauté onions until golden, then add tomatoes, cabbage, coriander powder, salt, and black pepper, cooking until tender.

Remove the vegetable mixture and set it aside.

Scramble the eggs in the same skillet, season with salt and black pepper.

Lay the chapati flat, spoon scrambled eggs and sautéed vegetables onto it.
Fold the sides in and roll the chapati tightly.
Repeat for the remaining chapatis.
Serve the Ugandan Rolex Chapatis whole or sliced, and enjoy.
