Tigernut drink, also known as horchata de chufa, is a delicious and refreshing beverage made from tigernuts. Tigernuts are not actually nuts but small tubers with a nutty flavor, and they are packed with nutrients and fiber. This recipe will guide you through the process of making a creamy and naturally sweet tigernut drink.

Ingredients
  

  • 1 cup tigernuts
  • 4 cups water
  • 3-4 tablespoons sweetener Eg honey, maple syrup, or sugar
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Ground cinnamon or cocoa powder for garnish (optional) 

Instructions
 

  • Place the tigernuts in a bowl and cover them with water. Let them soak for at least 8 hours or overnight. This will soften the tigernuts and make them easier to blend.

  • Drain the soaked tigernuts and rinse them thoroughly under cold water.
  • In a blender, combine the soaked tigernuts, 4 cups of water, sweetener of your choice, vanilla extract (if using), and a pinch of salt. Blend on high speed for about 2-3 minutes until you have a smooth and creamy mixture.

  • Place a nut milk bag or a fine-mesh sieve lined with cheesecloth over a large bowl or pitcher. Pour the blended mixture into the bag or sieve and let it strain. Gently squeeze the bag or press the mixture with a spoon to extract as much liquid as possible.
  • Once strained, taste the tigernut drink and adjust the sweetness if needed by adding more sweetener. You can also adjust the consistency by adding more water if desired.
  • Chill the tigernut drink in the refrigerator for at least 1 hour to allow the flavors to meld and the drink to become cold.
  • Before serving, give the drink a good stir as it may separate slightly. You can garnish each glass with a sprinkle of ground cinnamon or cocoa powder for an extra touch of flavor.

  • Serve the tigernut drink over ice and enjoy its creamy and nutty goodness!

Notes

Note: The tigernut pulp left in the nut milk bag or sieve can be used in baking or cooking as an ingredient or added to smoothies for extra fiber and nutrients.
