Place the tigernuts in a bowl and cover them with water. Let them soak for at least 8 hours or overnight. This will soften the tigernuts and make them easier to blend.
1 cup tigernuts
Drain the soaked tigernuts and rinse them thoroughly under cold water.
In a blender, combine the soaked tigernuts, 4 cups of water, sweetener of your choice, vanilla extract (if using), and a pinch of salt. Blend on high speed for about 2-3 minutes until you have a smooth and creamy mixture.
4 cups water, 3-4 tablespoons sweetener, 1 teaspoon vanilla extract, A pinch of salt
Place a nut milk bag or a fine-mesh sieve lined with cheesecloth over a large bowl or pitcher. Pour the blended mixture into the bag or sieve and let it strain. Gently squeeze the bag or press the mixture with a spoon to extract as much liquid as possible.
Once strained, taste the tigernut drink and adjust the sweetness if needed by adding more sweetener. You can also adjust the consistency by adding more water if desired.
Chill the tigernut drink in the refrigerator for at least 1 hour to allow the flavors to meld and the drink to become cold.
Before serving, give the drink a good stir as it may separate slightly. You can garnish each glass with a sprinkle of ground cinnamon or cocoa powder for an extra touch of flavor.
