Tarb (kofta wrapped in lamb fat)

Tarb kofta is a traditional Eid al-Adha meal. It is a heavy but delicious dish for family celebrations.

Ingredients
  

  • One medium onion
  • 1 kg minced lamb
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon spices
  • 1 tablespoon parsley
  • Tarb lamb fat
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 1/2 cup water

Instructions
 

  • Chop the onion and add to the minced lamb. Then add the salt, pepper, spices and parsley. Mix well together and leave for at least one hour.
  • Mold the kofta in finger like shapes, and cut the Tarb into small pieces. Place the kofta fingers inside the tarb pieces and roll each one separately.
  • Stack the fingers on a baking tray and season with salt and pepper. Add water.
  • Place the baking tray in an oven on medium heat for one and a half hours until cooked. Serve.
