Tarb (kofta wrapped in lamb fat)

Tarb kofta is a traditional Eid al-Adha meal. It is a heavy but delicious dish for family celebrations.

- One medium onion
- 1 kg minced lamb
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon spices
- 1 tablespoon parsley
- Tarb lamb fat
- 1/4 teaspoon salt
- Pinch of black pepper
- 1/2 cup water
Chop the onion and add to the minced lamb. Then add the salt, pepper, spices and parsley. Mix well together and leave for at least one hour.
Mold the kofta in finger like shapes, and cut the Tarb into small pieces. Place the kofta fingers inside the tarb pieces and roll each one separately.
Stack the fingers on a baking tray and season with salt and pepper. Add water.
Place the baking tray in an oven on medium heat for one and a half hours until cooked. Serve.
