Ingredients
  

  • 2 cups parboiled or long-grain rice 
  • 1 lb mixed seafood (shrimp, squid, mussels, etc.), cleaned and deveined
  • 1 onion, finely chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup mixed vegetables (e.g., peas, corn)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1/4 cup vegetable oil
  • 1 can (14 oz) diced tomatoes
  • 1 cup seafood broth or chicken broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish
  • Lemon wedges for serving

Instructions
 

  • Rinse the rice in cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.

  • In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and cook until they are soft and translucent.

  • Add the chopped red and green bell peppers to the pot. Sauté for a few minutes until the peppers start to soften.

  • Stir in the minced garlic and ginger, and sauté for another minute until fragrant

  • Mix in the paprika, ground cumin, ground coriander, and cayenne pepper. Let the spices cook for a couple of minutes to release their flavors.

  • Add the can of diced tomatoes to the pot and cook for about 5 minutes, allowing the flavors to meld.

  • Pour in the seafood or chicken broth, and add the thyme and bay leaf. Season with salt and pepper to taste.

  • Bring the mixture to a simmer and let it cook for about 10-15 minutes, allowing the flavors to develop.
  • Remove the bay leaf and blend the mixture using an immersion blender or a regular blender until smooth. If using a regular blender, be sure to let the mixture cool slightly before blending.
  • Return the blended mixture to the pot and bring it back to a gentle simmer.
  • Add the mixed vegetables and seafood to the pot. Cook for a few minutes until the seafood is almost cooked through.

  • Add the soaked and drained rice to the pot, and stir well to combine with the seafood and vegetable mixture.
  • Add enough water to cover the rice by about 1 inch. Adjust the seasoning if needed.
  • Bring the mixture to a boil, then reduce the heat to low, cover the pot with a tight-fitting lid, and let the rice simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  • Once the rice is cooked, fluff it with a fork and let it sit for a few minutes to steam.
  • Serve the Seafood Jollof Rice hot, garnished with fresh parsley or cilantro and lemon wedges.
