Ingredients
2 ripe bananas
1 cup all-purpose flour
1/4 cup sugar
1/2 teaspoon baking powder
Vegetable oil, for frying
1/2 cup milk
1 teaspoon vanilla extract
Powdered sugar, for dusting (optional)
Pinch of salt
Instructions
Peel the ripe bananas and mash them in a mixing bowl until smooth

In a separate bowl, whisk together the flour, sugar, baking powder, and a pinch of salt

Add the mashed bananas, milk, and vanilla extract to the dry ingredients.Stir until you have a smooth, thick batter

Heat vegetable oil in a deep frying pan over medium-high heat.

Using a spoon or your hands, drop small portions of the batter into the hot oil, making sure not to overcrowd the pan.
Fry the banana beignets until they turn golden brown on both sides, usually taking about 2 minutes per side.
Once cooked, remove the beignets from the oil and place them on a paper towel-lined plate to drain excess oil
Optionally, dust the beignets with powdered sugar before serving
