Ingredients
  

  • 2 ripe bananas
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon baking powder
  • Vegetable oil, for frying
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Powdered sugar, for dusting (optional)
  • Pinch of salt

Instructions
 

  • Peel the ripe bananas and mash them in a mixing bowl until smooth

  • In a separate bowl, whisk together the flour, sugar, baking powder, and a pinch of salt

  • Add the mashed bananas, milk, and vanilla extract to the dry ingredients.Stir until you have a smooth, thick batter

  • Heat vegetable oil in a deep frying pan over medium-high heat.

  • Using a spoon or your hands, drop small portions of the batter into the hot oil, making sure not to overcrowd the pan.
  • Fry the banana beignets until they turn golden brown on both sides, usually taking about 2 minutes per side.
  • Once cooked, remove the beignets from the oil and place them on a paper towel-lined plate to drain excess oil
  • Optionally, dust the beignets with powdered sugar before serving
    Powdered sugar, for dusting (optional)
