Igbo Yam Porridge

Ingredients
  

  • 2 kg peeled white yam, sliced
  • ½ cup ground crayfish
  • 1 maggi cube
  • 2 tablespoons palm oil
  • ½ cup ground ogiri (fermented igbo seasoning)
  • ½ cup sliced uziza leaves (for fragrance)
  • Salt & chopped onions (to taste)

Instructions
 

  • Boil yam slices till soft but still firm
    2 kg peeled white yam, sliced
  • Add palm oil, crayfish, ogiri, maggi cube & salt
    ½ cup ground crayfish, 2 tablespoons palm oil, ½ cup ground ogiri (fermented igbo seasoning), 1 maggi cube
  • Stir thoroughly & simmer for 3 minutes
  • Add uziza leaves & onions then take off heat
    Salt & chopped onions (to taste), ½ cup sliced uziza leaves (for fragrance)
  • Serve hot with extra veggies
