Homemade Pilau Masala
Pilau masala is a blend of aromatic spices that gives the classic East African dish, pilau, its unique and rich flavor.

- 2½ tbsp cumin seeds
- 1 tbsp black peppercorns
- 1½ tbsp cardamom pods
- 1 tsp ground cloves
- 1 stick cinnamon stick (about 5 inches)
Gather all your spices. If you're using whole spices, you’ll need to shell the cardamom pods, break up the cinnamon sticks, and measure out your other spices.
Lightly roast the spices in a heavy pan over medium heat. Stir continuously for about a minute until the spices become fragrant.
Transfer the roasted spices to a mortar and pestle. Crush them until you achieve a fine powder.
Store it in an airtight container
