Homemade Pilau Masala

Pilau masala is a blend of aromatic spices that gives the classic East African dish, pilau, its unique and rich flavor.

Ingredients
  

  • tbsp cumin seeds
  • 1 tbsp black peppercorns
  • tbsp cardamom pods
  • 1 tsp ground cloves
  • 1 stick cinnamon stick (about 5 inches)

Instructions
 

  • Gather all your spices. If you're using whole spices, you’ll need to shell the cardamom pods, break up the cinnamon sticks, and measure out your other spices.
  • Lightly roast the spices in a heavy pan over medium heat. Stir continuously for about a minute until the spices become fragrant.
  • Transfer the roasted spices to a mortar and pestle. Crush them until you achieve a fine powder.
  • Store it in an airtight container
