Beans Porridge

Beans porridge is a classic Nigerian dish that's both hearty and delicious. This recipe is perfect for a cozy night in or a family dinner.

Ingredients
  

  • 3 cups cooked beans
  • 1 small bunch chopped Ugwu (Fluted Pumpkin Leaves)
  • 2 tablespoon palm oil
  • ½ cup crayfish
  • 2 seasoning cubes
  • roughly blended tomatos (as desired)
  • pepper mix - Shombo and Scotch bonnet (as desired)
  • 1 large chopped onions 
  • smoked fish 
  • salt to taste

Instructions
 

  • Heat the palm oil in a large pot over medium heat.

  • Add the chopped onions to the pot and sauté until they become translucent.

  • Stir in the roughly blended tomatoes and pepper mix. Cook the mixture until the oil starts to separate from the tomato paste.

  • Add the smoked fish, crayfish, and seasoning cubes to the pot. Stir well to combine the flavors.

  • Pour in the cooked beans and stir gently to incorporate the ingredients. If the mixture is too thick, you can add some water to achieve your desired consistency.

  • Allow the beans to simmer for about 10-15 minutes, allowing the flavors to meld and the palm oil to infuse.
  • Add the chopped Ugwu (Fluted Pumpkin Leaves) to the pot. Stir and let it cook for a few minutes until the leaves wilt and become tender.

  • Serve the beans porridge hot with riped fried plantain.

Notes

Note: Beans porridge can be served on its own or with a side of fried plantains, yam, or rice for a delicious and satisfying meal.
