Pan Toasted Jollof Rice

Jollof rice is a popular dish prepared in many African countries and each recipe differs depending on country. There are different methods used in preparing this meal but this recipe captures how it is made by toasting.

  • 4 cup long grain parboiled rice
  • 1 tbsp tablespoon vegetable oil
  • 5 large tomatoes
  • 400 g tomato paste
  • 1 g celery
  • 2 large onion
  • 1 tbsp butter
  • 4 cubes Seasoning
  • 2 tsp Curry
  • 1 tbsp Ginger
  • 3 medium garlic cloves
  • 1 tsp thyme
  • 3 tbsp chilli pepper
  • 2 tbsp Crayfish
  • 1 tsp Nutmeg powder
  • 2 dry Bay leaves
  • Salt to taste


  • Wash the rice thoroughly and allow it dry for about 30 mins.
  • Put the butter and vegetable oil in a pot, allow it heat for a while until it has melted and mixed properly.
  • Put the rice in the pot with the mixture and stir till the rice is coated with the oil and butter mixture and toast it for about 8 to 10 mins and set aside.
  • In another oil in a pot, allow it heat and then add chopped onion and celery and stir for about 30 seconds.
  • Add tomato paste and fry for about 5 mins. Add your blended tomatoes, pepper, ginger, garlic, and onion.
  • Stir and allow it cook for 5 to 8 mins. Add curry powder, thyme, crayfish, chilli pepper, seasoning cubes, grate little nutmeg in it, add salt and stir.
  • Add your toasted rice to the mixture, throw in bay leaves.
  • Cover with foil paper and reduces heat to medium low to cook.
  • Once it’s done, stir and take out bay leaves
