Ingredients
- 2 cups long-grain parboiled
- 2 cups tomato sauce-
- 1 large onion, finely chopped
- 1 bell pepper finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger minced
- 1 teaspoon smoked paprika-
- 1 teaspoon ground cayenne pepper (adjust to taste)
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 4 cups chicken or vegetable broth
- 1/4 cup vegetable oil
- Salt and pepper to taste- Optional
- cooked meat or seafood (chicken, shrimp, or fish)
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions, bell pepper, garlic, and ginger. - Add the tomato sauce to the pot and stir well. Cook for about 5-7 minutes to allow the flavors to meld2 cups tomato sauce-
- Stir in the smoked paprika, cayenne pepper, thyme, curry powder, salt, and pepper. Once boiling, reduce the heat to low, cover the pot, and let the rice simmer for about 25-30 minutes, or until the rice is cooked and the liquid is absorbed. If using cooked meat or seafood, you can add it to the pot at this stage4 cups chicken or vegetable broth, cooked meat or seafood (chicken, shrimp, or fish)
- Once the rice is cooked, fluff it gently with a fork and let it sit covered for a few minutes to steam.
