Ingredients
  

  • 2 cups long-grain parboiled
  • 2 cups tomato sauce-
  • 1 large onion, finely chopped
  • 1 bell pepper finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger minced
  • 1 teaspoon smoked paprika-
  • 1 teaspoon ground cayenne pepper (adjust to taste)
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 4 cups chicken or vegetable broth
  • 1/4 cup vegetable oil
  • Salt and pepper to taste- Optional
  • cooked meat or seafood (chicken, shrimp, or fish)

Instructions
 

  • In a large pot, heat the vegetable oil over medium heat. Add the chopped onions, bell pepper, garlic, and ginger. Sauté until the onions are translucent and the vegetables are softened..

  • Add the tomato sauce to the pot and stir well. Cook for about 5-7 minutes to allow the flavors to meld
    2 cups tomato sauce-
  • Stir in the smoked paprika, cayenne pepper, thyme, curry powder, salt, and pepper. Adjust the seasonings according to your taste preferences.

  • Add the parboiled rice to the pot and stir until it is well coated with the tomato and spice mixture 
    2 cups long-grain parboiled
  • Pour in the chicken or vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let the rice simmer for about 25-30 minutes, or until the rice is cooked and the liquid is absorbed. If using cooked meat or seafood, you can add it to the pot at this stage
    4 cups chicken or vegetable broth, cooked meat or seafood (chicken, shrimp, or fish)
  • Once the rice is cooked, fluff it gently with a fork and let it sit covered for a few minutes to steam.
  • Serve the Liberian Jollof Rice hot, garnished with additional chopped vegetables if desired. It's delicious on its own or paired with fried plantains, coleslaw, or a fresh salad.
